Built to be made in batches and cooked all at once, they’re hearty, customizable, and designed to hold up beautifully in the fridge. Think fluffy eggs, melty cheese, and yummy bacon stacked on a toasty base, all prepped ahead so breakfast is never an afterthought. Whether you’re feeding a family, prepping for the workweek, or stocking up for early mornings, these sammies turn a little planning into a lot of peace.

  1. 1. Place bacon on cold griddle, then turn on and set on medium.
  2. 2. While the griddle warms up, slice bread and spread mayonnaise on the inside.
  3. 3. Cook bacon to desired crispiness and remove, placing on a paper towel lined tray, and set aside.
  4. 4. Place bread, mayonnaise side down, on the griddle to toast. When bacon cools, break each piece in half.
  5. 5. When bread is toasted, remove and place on large cutting board. Turn griddle down to low.
  6. 6. Pour eggs onto griddle in a large rectangle, or about the size of your bread. Spread thinly to cook quickly and evenly. Season.
  7. 7. When eggs are done, form to bread and place on bottom half. Add cheese to melt and bacon on top.
  8. 8. Cut baguette into 5 sandwiches and wrap in parchment paper.
  9. 9. Sandwiches will hold up in fridge for 5 days. Remove from fridge and warm.
