Description

Start with crispy fries right on the griddle — plenty of surface, plenty of crunch. That’s the beauty of cooking party food on a Blackstone: you can make a lot at once, and everyone gets fed. Season them up while they cook, get that golden color, and let the edges crisp. Top these fries with feta cheese, crispy gyro meat, more cheese, and a squeeze of fresh lemon juice for that bright, Greek-inspired flavor.

  1. 1. Heat griddle to medium-high.
  2. 2. Add oil to griddle surface and dump fries over the top. Toss fries in oil to coat and spread out. Continue to cook fries until crispy.
  3. 3. When fries are almost done, move to one side and add gyro meat to other side of griddle and crisp.
  4. 4. When fries are browned and crisp, turn off heat on that side and season with salt and Greek seasoning. Top with a light sprinkle of feta cheese.
  5. 5. Plate fries and top with meat. Add more feta cheese on top and gently squeeze a little lemon juice over the whole plate.
