  1. 1. Make chicken marinade by combining all ingredients and then covering chicken in marinade mixture. Refrigerate for at least 30 minutes.
  2. 2. Make salad dressing by combining ingredients in a jar and shaking. Refrigerate until ready for use.
  3. 3. Prepare salad with whatever greens and vegetables you prefer.
  4. 4. Preheat griddle to medium heat and apply a thin coat of olive oil.
  5. 5. Place chicken on griddle and turn when bottom is brown.
  6. 6. Check chicken temperature and pull from griddle at about 145 degrees. Slice chicken in strips and return to griddle to finish cooking. Drizzle with hot honey as it finishes.
  7. 7. Pull chicken from griddle when it reaches a temp of 145 degrees and add to salad. Drizzle dressing on top and add parmesan cheese (optional)
