Chorizo & Potato Tortas
Description
A torta is a Mexican-style sandwich. It’s quick and easy, but packed full of flavor, making it the perfect option for those busy weeknights.

1. Heat griddle to medium heat. Add chorizo and potatoes. Chop and combine.

2. Season with Hatch Chile & Cheddar seasoning. Cook until browned and slightly crispy.

3. Cut slit into top of rolls, almost all the way through. Use chorizo grease to toast inside of rolls.

4. Plate tortas: fill rolls with chorizo mixture, salsa, cheese, lettuce, and sour cream. Dust with seasoning.

5. Serve with tortilla chips and enjoy!
