  1. 1. Preheat griddle to medium heat. Add oil and add onions and peppers, and season. Sautéed until softened, and then turn off heat on one side and slide them over to keep warm.
  2. 2. Add more oil to griddle and add steak. Pull apart and spread out evenly - season thoroughly.
  3. 3. Once meat is browned, add veggies and toss together.
  4. 4. Place cheese slices on meat pile and melt. Once melted, toss all together. Create 4 piles, about the size of the rolls. Place rolls, open face down, on the piles and allow them to steam for about 30 seconds.
  5. 5. Turn heat off and let them continue to carmelize for another 60 seconds. Slide spatula under pile and place hand on roll. Turn over in one motion and plate.
