Peruvian cuisine is a fusion of local and international flavors. Rooted in the indigenous traditions, Peruvian cuisine has gained influences from other cultures including European, African, and Asian over the past several hundred years. The result is a fusion cuisine that reflects the nation's multicultural history. This dish is simple, yet creates new flavors - just in case you're tired of boring ol' chicken.

Instructions

Green Sauce

  1. Combine all ingredients except the olive oil in a blender process until smooth. With the motor running, slowly drizzle in olive oil. Transfer to a bowl and refrigerate until ready to serve.

Chicken

  1. Puree garlic, soy sauce, lime juice, oil, cumin, paprika, oregano and a pinch of black pepper in a blender.
 Put chicken in a large sealed bag and add marinade. Place in refrigerator and allow to marinate for at least 4 hours.

  2. Preheat griddle to medium-high heat. Cook chicken cook for 5-6 minutes, flip the chicken, cook for an additional 5-6 minutes, until internal temperature reaches 165°F.

  3. Put cooked chicken on a large serving tray. Drizzle chicken with green sauce and serve.

If you’ve ever wanted to cook an “expensive” cut w If you’ve ever wanted to cook an “expensive” cut without overcomplicating it—this is it. These Iberico Pork Flank Steak Tostadas prove you don’t need a long ingredient list or fancy technique to make something seriously craveable. Just a hot griddle, a quick sear, and a simple build that lets the pork shine.

INGREDIENTS

For the pork:
• 1 lb Iberico pork flank steak
• 2 tbsp olive oil
• Tequila Lime seasoning
• Juice of 1 lime

For the tostadas:
• 8 corn tortillas
• Neutral oil

Toppings:
• Shredded cabbage or lettuce
• Guacamole
• Crumbled cotija cheese
• Fresh cilantro

Chipotle crema:
• ½ cup sour cream
• 1–2 tbsp lime juice
• Pinch of salt
• Chopped chipotle peppers in adobo

INSTRUCTIONS

1. Season the pork with olive oil, lime juice, and seasoning. Let it sit 20–30 minutes at room temp.
2. Mix together the chipotle crema and set aside.
3. Preheat your griddle to medium-high heat.
4. Cook pork 3–4 minutes per side. Rest 5–10 minutes, then slice against the grain.
5. Crisp tortillas on the griddle until golden.
6. Build your tostadas with guacamole, pork, lettuce, cotija, crema, and cilantro.

This is one of those recipes that feels elevated but comes together fast—perfect for a weekend cook or when you want to impress without the stress.
