Ice cream, strawberries, and cookies? It's a no-brainer!
Preheat griddle to medium heat. Slice strawberries and set aside.
Put cookies in small, sealed plastic bag and smash with a kitchen mallet to make crumbs.
Melt butter on griddle and add strawberry slices. Toss in butter and cook for 3-4 minutes. Top with brown sugar and toss. Stir occasionally until syrup thickens. Remove from griddle and place in bowl.
In a bowl, add a scoop of vanilla ice cream. Pour strawberries on top and add cookie crumbs.
