1. Preheat griddle to medium heat.

2. Add corn to griddle and brown - squeeze lime juice on top and season with tajin. While that browns, in a bowl, add sour cream, mayo, 1/4 cup cotija cheese, and tajin seasoning. Once corn is brown, add to bowl and mix. Set aside.

3. Divide ground beef into 1/4 lb. balls. Press each ball flat onto a tortilla. This makes four 1/4 lb. tacos. Season with burger seasoning.

4. Place tacos flat, meat-side down on the griddle. Cook until crispy and flip, top with cheddar cheese.

5. Once meat is cooked and tortilla is crisp, place in taco holder. Fill with corn mixture, lettuce, cotija, and burger sauce.
