Description

When peaches are in season, try this version of the caprese salad for a light, yummy snack or appetizer.

  1. Make Dressing

    In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Set aside.

  2. Slice peaches and mozzarella cheese, totaling the same amount of each. Cut basil into small strips.

  3. Preheat griddle to medium-low. In a medium bowl, toss peach slices with half the dressing. Place peaches on griddle and gently toast each fleshy side.

  4. Plate peaches and mozzarella by alternating slices. Drizzle remaining dressing over all slices and top with basil. Serve immediately.
