Instructions

  1. 1. Make crepe batter. In a medium bowl, add flour, eggs, and salt. Whisk together.
  2. 2. Gradually add milk and whisk. Then stir in butter, sugar, and vanilla.
  3. 3. Set aside for bubbles to release - about 20 minutes.
  4. 4. Make whip. In a medium bowl, beat together cream and powdered sugar until peaks form.
  5. 5. Mix in chocolate mascarpone until well blended.
  6. 6. Add whip to a piping bag and set aside. (Put in fridge to keep cool if the ambient temp is high.)
  7. 7. Set griddle to low heat. Add 1/4 cup crepe batter to surface and spread with crepe tool.
  8. 8. When edges are brown, flip and continue to cook for another 30-60 seconds.
  9. 9. Remove from heat and place in a container with a towel over it to keep heat in. Continue this process until all batter is used.
  10. 10. Plate crepes by adding creme to the middle and folding over. Sprinkle powdered sugar on top and enjoy!
