  1. 1. Wash, peel, and thinly slice your sweet potato into rounds for chips. Pat dry.
  2. 2. Make your sauce: combine 1/2 cup mayo, 1/4 cup ketchup, 1/2 tsp. paprika, 1/2 tsp. garlic salt, 1 tsp. ground black pepper, and 1/2 tsp. Worcestershire sauce. Place in fridge to set.
  3. 3. Make your chips - heat a few inches of oil in a pan to 270 degrees. Add sweet potato slices to fry, about 3-4 minutes. Remove and place on paper towel. Salt.
  4. 4. Prep chicken - trim and pat dry with a paper towel. Butterfly or pound thin and season with oil and your choice of seasoning.
  5. 5. Place bacon on cold griddle and then turn on to medium heat. While bacon starts to cook, cut French loaf in half horizontally and oil inside. Cut tomato into slices.

  6. 6. Once bacon is crispy, remove and place on a paper towel lined tray. Use excess bacon grease to cook chicken. On the other side of the griddle, place bread buttered side down to toast.
  7. 7. Cook chicken to temp and then melt cheese slices on top.
  8. 8. Remove bread from griddle and place on cutting board. Add sauce to both sides of bread. Layer lettuce, chicken with cheese, tomato with salt and pepper, and bacon.
  9. 9. Cut loaf into 4 equal sandwiches and serve with sweet potato chips.
