Brussels Sprouts with Bacon Garlic Aioli

Bacon Garlic Aioli

Instructions

Make aioli.

  1. Chop bacon into small pieces, cook, drain, and set aside. In a bowl, add mayonnaise, salt, paprika, and garlic - combine. Stir in all but 1 tsp. of bacon. transfer to serving bowl and sprinkle with remaining bacon. Cover and chill for at least 3o minutes.

Make Brussels Sprouts.

  1. 1. Preheat griddle to medium-low.
  2. 2. Add diced bacon to griddle. Cook halfway and add sprouts on top of bacon.
  3. 3. Season with salt, pepper, and garlic powder. Toss sprouts and bacon.
  4. 4. Continue to cook until bacon is crisp and sprouts are softened and golden brown (add oil as necessary if griddle is dry).
  5. 5. Remove from heat and add to bowl or aluminum pan. Cover with foil so sprouts continue to steam and stay warm until aioli is ready.
  6. 6. Serve with aioli on the side for dipping.

Note

Aioli is optional.
