Description

This smoky-sweet Bacon Jam is made right on the griddle, where crispy bacon meets deeply caramelized onions in a bubbling bath of flavor. Thick-cut bacon is chopped and cooked until golden and just crisp, releasing its rich fat to become the perfect base. Diced onions are added and slowly sautéed until they turn golden-brown, absorbing all the bacon goodness and releasing their natural sweetness.

A blend of brown sugar, a splash of apple cider vinegar, and a touch of maple syrup or coffee (depending on your flavor preference) are mixed in to create that sticky, jammy consistency with the perfect balance of sweet, salty, and tangy. The open surface of the griddle allows for even caramelization and bold flavor development you can’t get from a stovetop pan alone.

This griddle bacon jam is perfect as a burger topping, on toast, or spooned over eggs, cheese boards, or even roasted veggies.

  1. 1. Preheat griddle to medium-low.
  2. 2. Cook bacon until crispy. Remove, drain, and set aside.
  3. 3. Adjust griddle temperature to low.
  4. 4. Cook onions in bacon grease until transluscent.
  5. 5. Add bacon, maple syrup, brown sugar, and apple cider vinegar to onions.
  6. 6. Mix thoroughly and often until you achieve a jam-like texture.
  7. 7. Remove from griddle, put into a bowl, and enjoy on whatever dish you'd like to add it to.
