Bacon Jam

1. Preheat griddle to medium-low.

2. Cook bacon until crispy. Remove, drain, and set aside.

3. Adjust griddle temperature to low.

4. Cook onions in bacon grease until transluscent.

5. Add bacon, maple syrup, brown sugar, and apple cider vinegar to onions.

6. Mix thoroughly and often until you achieve a jam-like texture.

7. Remove from griddle, put into a bowl, and enjoy on whatever dish you'd like to add it to.
