If you think a hot dog can’t get any better, meet the Guac & Loaded Dog. This isn’t your average backyard hot dog. A juicy griddled hot dog gets tucked into a bun, smothered with creamy pulled pork queso, piled high with fresh chunky guacamole, and finished with a drizzle of spicy mayo.

It’s messy, indulgent, loaded with Southwestern flavor, and exactly the kind of meal that was made for the Blackstone griddle.

The combination of smoky, savory pulled pork queso, cool and creamy avocado, fresh tomatoes, crunchy red onion, jalapeño, and spicy mayo makes every bite a little different. Grab plenty of napkins—you’re going to need them.

Instructions

  1. Make the chunky guacamole - add the diced avocados, tomato, red onion, jalapeño, and cilantro to a bowl. Add the lime juice, salt, and garlic paste. Gently fold everything together, being careful not to completely mash the avocado. You want a chunky guacamole with plenty of texture. Taste and adjust the salt, lime, or jalapeño as needed.

  2. Preheat your griddle to medium heat. Add the hot dogs and cook, turning frequently, until they’re heated through and nicely browned on the outside. For even more flavor, roll the hot dogs across the griddle until you get a good amount of caramelized color on the exterior.

  3. Heat the pulled pork queso on the griddle in a small pile or in a griddle-safe pan until warmed through and creamy. If your queso is especially thick, stir in a small splash of milk until it reaches your desired consistency.
  4. Place a hot dog inside each bun. Top generously with queso, followed by a big scoop of chunky guacamole.Drizzle the spicy mayo over the top.

Variations

Make It Extra Spicy

Add additional jalapeño to the guacamole and use a hotter hot sauce in the spicy mayo.

Make It Extra Cheesy

Add shredded pepper jack or cheddar cheese to the hot dog before topping it with pulled pork queso.

Add More Pulled Pork

For the ultimate loaded hot dog, add a layer of pulled pork directly on top of the hot dog before adding the queso.

Make It a Party

Set up a hot dog topping bar with queso, pulled pork, guacamole, spicy mayo, jalapeños, onions, cilantro, shredded cheese, and your favorite hot sauces.

Can I make these hot dogs without a Blackstone griddle?

Absolutely. The hot dogs can be cooked on a skillet, grill, or stovetop, and the buns can be toasted in a regular pan. The Blackstone simply makes it easy to cook everything at once and gives the hot dogs and buns that great griddled flavor.

Can I make the guacamole ahead of time?

Yes. The guacamole can be prepared a few hours ahead of time. Press plastic wrap directly against the surface of the guacamole and refrigerate until ready to serve to help prevent browning.

All-beef hot dogs from Teton Waters Ranch are my favorite for this recipe because they have enough flavor to stand up to all of the toppings. However, use whatever hot dog or sausage your family loves.

Absolutely. Homemade chunky guacamole gives you the best texture and flavor, but a good store-bought guacamole works when you’re short on time.
