Heat your griddle to medium-high heat (about 375°F). Lightly oil the surface.

Add peas & carrots to one side of the griddle. Cook for 4–5 minutes until tender-crisp. Move to a cooler side.

Season pork lightly with salt and pepper. Add to the hot side of the griddle and cook for 5–7 minutes, stirring occasionally, until browned and cooked through.

Pour the Chili Sesame sauce over the pork. Stir to coat evenly. Add the cornstarch slurry and cook for 1–2 minutes until the sauce thickens and becomes glossy.

Add cooked rice to the griddle for a minute or two if desired, tossing lightly to warm through. Add eggs next to rice and cook - then combine eggs, rice, and vegetables.
