These Tex-Mex Taquitos are crispy, cheesy, and loaded with bold flavor in every bite. Corn tortillas are filled with seasoned ground beef, creamy refried beans, and melted cheddar cheese, then crisped up on the griddle until golden brown and crunchy. The flat top gives them the perfect texture without deep frying, making them an easy crowd-pleaser for weeknight dinners, game days, or party snacks. Serve them with salsa, guacamole, or sour cream for the ultimate Tex-Mex comfort food experience.

  1. 1. Heat your griddle to medium heat (about 350°F) and lightly oil the surface.
  2. 2. Add the ground beef to the griddle and cook until browned, breaking it apart as it cooks.
  3. 3. Stir in taco seasoning and water. Cook for another 2–3 minutes until thickened and flavorful. Add beans to griddle and break apart, mixing with ground beef. Remove mixture and place in a bowl.

  4. 4. Place tortillas on the griddle for 15–20 seconds per side until soft and pliable. This helps prevent cracking when rolling.
  5. 5. Build your taquitos. Spread a thin layer of meat/bean mixture down the center of each tortilla. Add shredded cheddar cheese.

  6. 6. Roll the tortillas tightly into taquitos and place seam-side down on the griddle.

  7. 7. Lightly oil the outside of the taquitos and cook for 2–3 minutes per side, turning occasionally, until golden brown and crispy.

  8. 8. Serve with sour cream, salsa, queso, guacamole, or your favorite toppings.
