1. Preheat griddle to medium-low heat. Cook onions in butter until softened.

2. In a medium bowl, mix stuffing, salt/pepper/garlic, parmesan cheese, and green chiles. Once onions are softened, add onions and egg to the bowl and mix.

3. Roll mixture in your hands to make 10 approximately 1.5 inch balls.

4. Place ball on bacon slice and roll up. Place on griddle, seam-side down first. (if necessary, use toothpick or griddle pin to hold bacon together)

5. Cook each side of each piece until golden brown.

6. Remove from heat, plate, and sprinkle on parsley. Then, drizzle with green sauce.
