Cherry Chipotle Pork Tenderloin

Forget chops, this pork tenderloin will change your life! Ok, maybe not all that dramatically, but it's definitely something different.

  1. Prep pork tenderloin.

    Trim any extra fat from tenderloin with a sharp knife. Cut into 3 equal sections. Butterfly cut each piece. Using a large plastic bag, place over each piece and flatten with a kitchen mallet. 

  2. Season all pieces, both sides, with salt, pepper, and garlic powder.

  3. Heat the griddle to medium-high heat. Add a light coat of olive oil to the griddle surface. Cook pork for approximately 5 minutes on each side. After first turn, brush each piece with TD's Cherry Chipotle sauce. When pork is done (has reached an internal temp of at least 145 degrees), pull from griddle and brush other side with sauce. Allow pork to rest for at least 4 minutes. 

  4. Plate and serve with your favorite vegetable side.
