Let's take this classic for a spin and get fancy with our bacon, shall we? Grab your pig, cuz this sandwich will squash that grumbly stomach in no time.

Ingredients
    Sweet & Spicy Bacon
  • 1 lb thick-cut bacon (cut in half)
  • 2 jalapenos (deseeded and finely chopped)
  • 1/3 cup brown sugar
  • 1/4 tsp cinnamon
  • B.L.T. Sandwich
  • 4 sourdough bread (slices)
  • 4 red leaf lettuce (leaves)
  • 1 kumato (brown tomato) (sliced)
  • 1/2 cup hatch jack cheese (grated)
  • mayonnaise
Instructions

    Enhance that bacon.

    In a large bowl, combine brown sugar and cinnamon, and mix. Add diced jalapeños and mix.

    Add bacon to bowl, making sure to coat each piece with the mixture and work in the jalapeños by hand. 

    Gloves would be helpful here.

    Make your sandwich.

    Spread mayonnaise on one side of each piece of bread.

    Turn on griddle to medium-high heat. Cook bacon until crispy brown. Remove and place on a tray with parchment paper.

    The bacon will be sticky so do NOT put it on a paper towel.

    Toast bread, mayonnaise side down. Add cheese to untoasted side of bread. Remove when lightly toasted.

    Assemble your sandwich.

    On one piece of bread, layer lettuce, bacon, and tomato. Top with second piece of bread. Cut in half and enjoy!
