In my house, I often hear the phrase, "I'm craving Chinese take-out!" So, I figured, let's put that griddle to use and make it at home. It's easy to make, and to make a lot of so invite the whole crew over!
In a large bowl, mix together the flour, cornstarch, salt, pepper, and garlic powder. In a medium bowl, whisk 2 eggs.
Add the cubed chicken pieces to the flour mixture and coat thoroughly.
Heat oil on one side of the griddle to 350˚F. Set aside a wire rack and slotted spoon or mesh strainer.
Dip chicken cubes into egg mixture and then add the chicken to the hot oil in batches, frying for 3-4 minutes until golden and crispy. Remove to the rack with a slotted spoon and repeat for remaining chicken.
Heat the other side of the griddle to medium-high heat. Add the tablespoon of oil, onion and bell peppers and sauté for 2-4 minutes until slightly softened.
Pour the sweet chili sauce over the onions and peppers.
Add the cooked chicken to the onions and peppers and toss all ingredients together to thoroughly coat with sauce.
Remove from the griddle and serve over rice (if desired).
