- 1 lb. ground beef
- 4 slices cheddar cheese
- 4 small flour tortillas
- 1 can sweet corn, drained
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 cup cotija cheese, grated
- 1 Tbsp. tajin seasoning (extra for topping)
- 1/2 lime, juiced
- 2 cups shredded lettuce

2. Add corn to griddle and brown - squeeze lime juice on top and season with tajin. While that browns, in a bowl, add sour cream, mayo, 1/4 cup cotija cheese, and tajin seasoning. Once corn is brown, add to bowl and mix. Set aside.- 3
3. Divide ground beef into 1/4 lb. balls. Press each ball flat onto a tortilla. This makes four 1/4 lb. tacos. Season with burger seasoning.- 4
4. Place tacos flat, meat-side down on the griddle. Cook until crispy and flip, top with cheddar cheese.- 5
