Description

Pancakes are always a big hit on the weekends, but as a mom with a toddler, we quickly learned it was much easier to make everything sized for small hands and dippable. Basic pancakes transformed to mini pancakes, which transformed into pancake banana bites. Swap out the syrup for chocolate sauce and you've got a bonafide hit on your hands.

Ingredients
  • 1 banana (sliced 1/2-inch thick)
  • 1 cup all-purpose flour
  • 2 tbsp baking powder
  • 2 tbsp sugar
  • 1/2 tsp salt
  • 1 cup milk
  • 2 tbsp butter (melted)
  • 1 large egg
  • chocolate sauce
  • powdered sugar
Instructions
  1. Preheat griddle to medium-low heat. Slice banana and set aside. In a small bowl, whisk together flour, sugar, baking powder, and salt; set aside.

  2. In a medium bowl, whisk together milk, butter, and egg. Add dry ingredients to milk mixture; whisk until just moistened (do not overmix).

  3. Using a fork, dip slices of banana into pancake batter and add to griddle. Once bottom is lightly brown, flip and cook other side.

  4. Remove pancakes when brown on both sides, dust with powdered sugar and drizzle with chocolate sauce.
