Description

These adorable little lamb chops make the best Lamb Lollipops! They call ‘em that because the bone serves as a handle for this juicy, tender goodness. Serve with sweet potatoes and Brussels sprouts for the perfect plate.

Ingredients
  • 6 lamb chops (bone-in)
  • 4 tbsp olive oil
  • 1 tsp rosemary (fresh)
  • 1 tsp parsley (fresh)
  • 1 tsp garlic (chopped)
  • 1 tsp thyme (dried)
  • 1 tsp oregano (dried)
  • 1 tsp salt
  • 1 1/4 tsp cumin (dried)
Instructions
  1. Make the marinade.

    Add olive oil, rosemary, parsley, garlic, thyme, oregano, salt, and cumin to a food processor and blend.

  2. Place chops in a large sealable bag or bowl and pour marinade over top. Gently toss to coat chops. Marinate in the refrigerator for at least 1 hour.

  3. Set griddle to high heat. Cook chops for 3 minutes on each side, or until they reach an internal temperature of at least 150 degrees.
