Ingredients
  • 1 ciabatta roll
  • 2 eggs (scrambled)
  • 1/2 cup mozzarella cheese
  • 1/4 cup parmesan cheese
  • 6 pepperoni (slices)
  • 1/4 cup tomato sauce
  • 1 tbsp butter
  • olive oil
  • 1/4 tsp Italian seasoning
  • salt
  • pepper
Instructions
  1. Preheat griddle to medium heat. Coat your griddle with olive oil.

  2. Cut your ciabatta roll in half and butter it. Put it on the griddle to toast. In a small bowl, scramble eggs with salt & pepper to season.

  3. Pour eggs on griddle in a square shape. Flip them when they are mostly cooked. Add cheeses, pepperoni, and seasoning to half of the eggs. Fold it over like an omelet.

  4. Top with sauce. Fold it over again. Put eggs on roll. Cut it. Eat it. Enjoy it!
