Description

Inspired by Ayesha Curry, this fried chicken sandwich is absolutely delicious. Customize it with your favorite toppings and pair with some crispy french fries for an easy weeknight dinner. Shout out to Selena + Chef on HBO for the idea.

Ingredients
    Hot Honey Sauce
  • 1/4 cup honey
  • 2 tbsp butter (unsalted)
  • 1 1/2 tbsp Frank's Red Hot sauce
  • Chicken
  • 3/4 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp smoked paprika
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 cup buttermilk
  • 1 tsp minced garlic
  • 2 chicken breasts (skinless, halved into cutlets)
  • 1/2 cup mayonnaise
  • 4 brioche buns
  • 4 butter lettuce (leaves)
  • 1 hothouse tomato (sliced)
  • dill pickle chips
Instructions
  1. Make the hot honey sauce.

    In a small saucepan over low heat, combine honey, butter, and hot sauce. Stir occasionally until butter is melted and sauce is smooth. Set aside.

  2. Get your oil ready.

    Heat a 2" depth of canola oil in a disposable aluminum pan on a high-heat griddle until it hits 375 degrees. While it heats, prepare your chicken.

  3. Prepare your chicken.

    In a baking dish, whisk together the flour, cornstarch, garlic powder, 1 tsp. onion powder, 1 tsp. paprika, salt, and pepper. In a separate baking dish, whisk together buttermilk, garlic, 1 tsp. onion powder, and 1 tsp. paprika.

  4. Dip each piece of chicken in the buttermilk mixture, letting the excess drip off. Then coat in the dry ingredients and place on a tray.

  5. Add chicken to oil and fry for 4 minutes, then turn over and fry for an additional 4 minutes, or until internal temperature reaches at least 170 degrees. Remove from oil and place on a paper-towel lined tray.

  6. Toast brioche buns on griddle top.

  7. Assemble your sandwich. Bottom bun, lettuce, chicken, drizzle with hot honey sauce, top with tomato, pickle, and mayo on top bun. Serve immediately.
