Heat your griddle to medium-high (about 375–400°F). Lightly oil the surface.
Drizzle the chicken with olive oil and season both sides with garlic powder, Italian seasoning, salt, and pepper.
Place the chicken on the hot griddle and cook for 4–5 minutes per side, or until golden brown and fully cooked through (165°F internal temperature).
