Ingredients
  • 36 oz gnocchi
  • 1 lb ground chorizo (pork or beef)
  • 3 cup spinach
  • 1 small onion (diced)
  • 2/3 cup roasted red peppers (diced)
  • 1 tbsp garlic (minced)
  • 1/2 cup parmesan cheese (grated)
  • salt (to taste)
Instructions

    Preheat half of your griddle to medium-low heat. Leave the other half off.

    Brown the chorizo. Slide to side of griddle where the burners are off.

    Add gnocchi, onion, roasted red peppers, garlic, and salt to the hot griddle side and cook for 3 minutes or until gnocchi is golden brown.

    Add chorizo on top of the gnocchi and toss together. Add the spinach. Combine all ingredients until the spinach is wilted.

    Turn off all burners and top with parmesan cheese. Serve family style in a large serving dish or bowl.
