Run to the store and buy yourself some ground ginger, ASAP.
Preheat griddle to medium heat. Drizzle both sides of chicken with olive oil. Layer on your seasonings to both sides. Make sure to coat the chicken entirely.
Add a thin layer of olive oil to the griddle surface. Cook chicken for 4 minutes, then flip and cook for an additional 3 minutes, or until the internal temp is at least 165 degrees.
Slice chicken and serve on your choice of salad, or add to any dish you like.
