Preheat griddle to medium heat. Add olive oil to griddle. Toast bread and crisp up prosciutto. Pull prosciutto and set aside.
Add additional oil to griddle and add parmesan cheese, forming an area as big as the bread. Once cheese is rown and crispy, flip over and crisp other side. Set aside.
Fry egg in remaining oil, leaving yolk in tact. Season with salt and pepper.
On sourdough toast, spread mashed avocado, then layer on your cheese, egg, and prosciutto. Cut in half, diagonally and enjoy.
