Chicken Caesar Salad Boats

Description

Everyone loves a good chicken caesar salad, but sometimes it's tough to get the kids in on it. These adorable lettuce boats make eating salad fun and easy. Try it tonight!

Ingredients
  • 4 chicken cutlets (skinless)
  • 1 small head of romaine lettuce
  • 2 ciabatta rolls
  • shaved parmesan cheese
  • caesar dressing
  • olive oil
  • Italian seasoning
Instructions
  1. Prep croutons.

    Slice ciabatta rolls into cubes and place in medium bowl. Drizzle with olive oil and Italian seasoning and toss, coating all pieces. Set aside.

  2. Prep lettuce.Cut off stem of lettuce and remove 2-3 outer leaves and throw away. Remove 8 additional leaves and set aside. Shred the remaining lettuce and put in a medium bowl.
  3. Prep chicken.Drizzle chicken with olive oil and rub to coat evenly. Sprinkle with Italian seasoning. Turn over and do the same thing to the other side.
  4. Preheat griddle to medium-high heat on one side, and medium heat on the other. On the medium-high side, add bread cubes. Toss periodically until golden brown and crispy. Remove and put in bowl.
  5. On medium heat side, add chicken. Cook for 5 minutes and then turn, cooking for an additional 5 minutes, or until an internal temp of 165 degrees is reached. Remove from griddle and place on cutting board. Let rest for 3 minutes, and then dice.

  6. Make boat filling.

    In the bowl with shredded lettuce, add chicken and dressing. Toss.

  7. Fill boats.

    In each whole leaf of lettuce, add salad filling and top with parmesan cheese and croutons. Enjoy!

Note

Italian seasoning used is the Blackstone Tutto Italiano seasoning.
