Description

Giving new life to leftovers is always a challenge, but this recipe made on the griddle makes it so easy.

Ingredients
  • 2 cups mashed potatoes
  • 1/3 cup flour
  • 1 egg
  • 1 tsp. salt
  • 1 tsp. ground pepper
  • 1 tsp. garlic powder
  • 2 cups shredded cheddar cheese
  • sour cream (optional for topping)
Instructions

    1. Preheat griddle to medium. In a bowl, mix all ingredients except for 1 cup of cheese.

    2. Place 1/4 cup of cheese on griddle and add 1/4 cup of mashed potato mixture on top. Repeat approximately 8 times.

    3. When cheese starts to bubble and turn brown, flip over and smash slightly to form a pancake.

    4. When bottom of pancake is browned, remove and let cool.
