Ingredients
    Baja Sauce
  • 2 Chipotle Peppers in Adobo Sauce
  • 1 cup Sour Cream
  • 3 Tbsp. Fresh Lime Juice
  • 1 tsp. Salt
  • Lime Zest
  • Avocado Smash
  • 1/2 Avocado
  • 1/2 Lime, juiced
  • pinch Salt
  • Sandwich
  • 1 Bagel, sliced in half
  • 1/3 lb. Pork Chorizo
  • 2 Eggs
  • 1/4 cup Cheddar Cheese, shredded
  • Salt & Pepper
Instructions
    Make baja sauce.
  1. In a blender or food processor, add peppers, sour cream, lime juice, salt, and lime zest. Blend.

  2. Make avocado smash.
  3. Cut avocado in half and scoop out one half into a bowl.

  4. Add lime juice and salt. Mix all ingredients thoroughly to make a paste consistency.

  5. Make your sandwich.
  6. Set your griddle to medium-low heat on one side, low heat on the other. Make two 1/6 lb. balls of chorizo. These will be flattened into patties on the griddle.

  7. On the medium-low side, smash your chorizo balls into patties and cook for 3 minutes, flipping after the meat is browned.

  8. On the low side, place your bagel cut-side down to toast. Next to that, crack open eggs and cook to desired doneness. Season eggs with salt and pepper.

  9. Once bagel is toasted, flip over and add shredded cheese. Then add chorizo patties and eggs to the stack.

  10. On the top inside of the bagel, spread avocado smash. Over the stack, drizzle with baja sauce. Assemble sandwich and enjoy!
